I'm in the same position! My main system is a MacBook Pro, so I need Mac support. The binary drivers are working on Mac, but there's no software or library that communicates to these drivers correctly. The latest version of gr-osmosdr supports SDRPlay (you should enable it when building from source)...

No it does not support gr-osmosdr yet, so in practice you can't use SDRPlay on Mac (I've tried all programs)
But it works as expected with SDRSharp and HDSDR on Windows

Yes, ANT500 works perfectly with SDRPlay
I've tested it with FM (88-108MHZ) and some parts of VHF-UHF (120-600MHZ) with good results.
(Its frequency support is advertised as 75-1000MHZ and I haven't tested it with more than 600MHZ)

In another topic named "Linux", SDRPlay support team mention that the gr-osmosdr has some changes and its code is updated. I didn't have access to Linux, so I checked out the latest source, compiled and installed it on Mac OS X and there is no difference at all. I still can see/detect SDRP...
